cook Bibimbap
Ingredients
and quantity for 5 persons
Rice 4 cups, water(or meat soup) 4-1/2 cups, beef(fore
rump part) 300g, aged soy sauce 2-1/2 big spoons, sugar
1-1/2 big spoons and salted sesame 1 big spoon
㉠ Powdered pepper 1 small spoon, green onion(minced)
2 big spoons, garlic(minced) 1 big spoon, sesame oil 1 big
spoon, bean sprouts 200g, sale 1 small spoon, mild soy sauce

㉡ Salted sesame 1 small spoon, green onion (minced)
2 small spoons, garlic(minced) 2 small spoons, sesame oil
1 small spoon
㉢ Green onion (minced) 2 small spoons, garlic (minced)
2 small spoons, sesame oil 2 small spoons, aged soy sauce
1 big spoon, salted sesame 1 small spoon
㉣ Green onion (minced) 2 small spoons, garlic (minced)
1 small spoon, sesame oil 1 small spoon, ballonflower 200g,
salt 1 big spoon, mild soy sauce 1 small spoon
㉤ Green onion (minced) 2 small spoon, garlic (minced)
2 small spoon, salted sesame 1 small spoon, sesame oil 2
small spoons, bracken 200g, aged soy sauce 1 big spoon,
salted sesame 1 big spoon
㉥ Green onion (minced) 2 small spoons, garlic (minced)
2 small spoons, young pumpkin 200g, sale 1 big spoon, Pyogo
mushroom 2 pieces(20g), sesame oil 2 small spoons, pear
1 each, egg 2 each, kelp 40g, pan-fried red pepper paste
5 big spoons, sesame oil 2 big spoons.
① Wash rice, pour water (or meat soup) and properly
cook steamed rice. Put a little quantity of sesame oil and
salt into the steamed rice and mix it thoroughly.
② Slice raw beef, season it using ㉠ and pan-fry
it slightly.
③ Get rid of tails of bean sprouts, boil it with some
salt in the water and season it using ㉡. Shred young
pumpkin in the length of 5cm, keep it in salted water for
a short while, eliminate dampness from the pumpkin and pan-fry
after seasoning using ㉢.
④ Soak Pyogo mushrooms, shred them and pan-fry them
after seasoning using ㉣.
⑤ Put some salt on ballonflower, massage it for a
short while and wash it in water to get rid of bitter taste.
And then shred it in the length of 5cm with the thickness
of 0.3cm, fully pan-fry it after seasoning using ㉤.
Apply the same process to bracken but using ㉥ for
seasoning.
⑥ Shred pear in thick size.
⑦ Pan-fry egg for yellow and white part separately
and shred it in the length of 5cm.
⑧ Fry kelp in cooking oil and crush it into small
pieces.
⑨ When all the above are ready, put rice in a bowl
only up to half of it and put the above ingredients like
topping with the balance of colors while putting fried kelp
in one side of it. Prepare red pepper paste and sesame oil
separate.
⑩ Rice and vegetables may be served in separate dishes.
☞ Raw beef may be sliced and seasoned using various
spices and it can be served together with seasoned green-lentil
jelly.
☞ Kinds of vegetables to use for Bibimbap are flexible
and therefore it is desirable to use more than three vegetables
easily available in the season.
☞ It will give more taste to Bibimbap if fried red-pepper
paste is served for Bibimbap. Fried red pepper paste can
be made by frying minced and seasoned beef first and putting
sugar, water and red pepper paste.
